Clove 

Cloves are a common type of spice found in most households. These are nothing but flowers with a medical fragrance. The oil from cloves is extracted before they are dried and used in cooking. You shouldn’t go overboard with cloves since it overpowers the taste of delicate flavors. But what most people fail to realize is that because of its strong fragrance and taste, only a couple of them go a long way and suffice the entire dish.    

Turmeric

Turmeric, better known as Haldi in India, is a multi-purpose spice. We say this because it can be used fresh or as a powder. Depending upon the requirement of the delicacy, turmeric is used. This is another spice that has a pungent taste and could be overpowering for some people. But the appearance and color that it gives are mouthwatering. Besides being used in food preparation, it has great medicinal properties.   

Coriander

This spice is regarded as one of the oldest-known spices in the world and is a must found in Indian delicacies. Coriander seeds have a citrusy note to them and a gently rigid texture. It is used in two ways, either as seeds or in powder form. It entirely depends on what form of coriander suits the dish that is being cooked. The best way to use coriander seeds is to roast them till they turn golden-yellow and their fragrance is released.  

Cumin

Cumin is another widely used ingredient in Indian dishes. It is often mistaken with fennel due to its very similar appearance. Cumin has an intense, smoky fragrance that makes the dish palatable. Some also use its power by toasting it a bit and then grinding the whole seeds. More often than not, it is used as a whole seed. The trick to getting the right amount of fragrance from cumin is to toast it for about 30 secs to avoid burning it and mix with other spices as you may please.
